Going by the success of Hearthfire (which forever altered Bethesda's priorities, probably negatively) and Baldur's Gate 3, there's a demand for this kind of thing when it's executed well.

Perhaps it was true with Hogwarts Legacy due to its school setting, but I just can't see it with other games. Hearthfire was a success because skyrim is an open world game where you gather resources and entertain yourself, BG3 was a success in spite rather than because of the social gayshit.

We'll see, but at the moment it's #4 in Steam wishlists already, beaten only by three multiplayer games. Poor Polish Vampire Hunter D is merely #11 (not counting hardware) even though it's going to be out sooner.
