Funny, I was just about to say PoE2. It isn't exactly "chill", but it lets you pause, so I can play it while eating, unlike Monster Hunter.

Rhythm games. Dancing Persona (3, 4, 5) and Taiko no Tatsujin are my favourites.
Good songs that I love and that put me into a nice mood contribute to the "relaxing / good" vibes the most. But of course, if I go for hardcore difficulties and perfect runs it can be frustrating at times.

Those can be played in short bursts without much thinking while doing something more constructive on the side.

Doom I + II or some Retro game. Well-targeted rockets or BFG hits on a big group of demons are so comfy that it becomes relaxing.
None comes to mind for the latter, in recent times. Usually some Platformer.

Actually the economics side of CK2 is incredibly simple. Try Imperialism 2 for a better system (it begins in late middle ages).
