AFAIK the color of characters, along with how they look, is all controlled by facegen. You know how you 'sculpt' your character's face, pick their race, etc.,? That's just using the facegen tech behind the scenes. Yup, They've been doing it that was as long as I remember. They do all their 3D Modelling in Maya / 3DS Max.. Morphs and Shape Keys are standard concepts in all 3D rendering, it's not engine specific.
