Even this looks like garbage. Assassin's Creed has always had problems with outfits. The supposed greatest assassins in the world, who blend into the shadows, are wearing the richest, most colorful, and eye-catching outfits you could stumble upon.

Kinda, from a certain point of view. That's Ezio's basic outfit in AC Brotherhood. When you buy upgrades, it gets covered in armor pieces. Those armor pieces don't look as cool, though. That's why this particular base version of the outfit has been the Ezio's outfit in every other game (from AC3 onwards).
The first AC game had monks wearing white robes which allowed Altair to hide among them.

In AC2 they tried to keep the general color scheme but got more extravagant with the Italian fashion.

But, yes, by the time Brotherhood came out, they just went for what looks cool, not what made tactical sense for an order of assassins to wear.
The core idea of the first game was really appealing to me, although the execution was ***. It was probably the "purest" Assassin's Creed game; you belong to an Assassin organisation, you follow a certain creed, you do assassination missions, and collect intel. And the game actually ******* focused on the brotherhood. That "nothing is true" motto is actually given some thought and consideration, as Demond and Altair come to question the nature of the creed they follow. I also like the interesting dialogues/ debates that Altair has with his mentor, and Desmond with Vidic. I think that with every subsequent release, the game strayed from the original concept and purity that the first game had. If in an ideal world, someone was to remake the first game *properly*, that would probably be my favourite assassin's creed game.

Delay comes down to a strict development timeline and the need to address issues caused by the set timeline.
