Does Dragon Age ever mention apostates attempting to escape to the Tevinter Imperium (or, if not, why they wouldn't be able to do this)? I have some faint recollection but it's been a long time. This seems like it could've made for a fun plot before the series ended up in the gutter.

I think DA2 had a side quest about mages trying to run away to Tevinter. They got caught because of the blood GPS the Chantry uses to track apostates.
Another one in 2 is a half-elf mage kid who has Freddy Krueger powers. He can escape to Tevinter depending on your choices in that quest.
Also, as much as the mages are respected in Tevinter, it's still a slaver society with an anti-Pope. And that's a huge minus, optics-wise, considering that Andraste, the woman the predominant faith is named after, led slave rebellions. So a lot of people including mages are too fearful and distrusting of Tevinter to even consider doing there.
And Thedas is a medieval fantasy land. There's no safe teleportation magic, thus travelling all across the continent from Ferelden with the Templars magically tracking you is a task too daunting for most mages.

Also, this is in fact the very core of the mage alliance quest of Inquisition: the rebel mages have turned themselves over to emissaries of the Tevinter Imperium - only to realize that they are about to get ****** with red lyrium spikes.

The issue is that BioWare just makes it nonsensical to ever spare Loghain and side with him over Alistair, if you are a gigachud patriotic fereldan noble he has done irreversible damage to the country and has personally went out of his way to try ruining your life multiple times over, if you are a goodhearted sissy then it makes no sense to side with someone as chuddy as him. If Loghain was a better fighter and strategist, and actually kept his sharpness and greatness that they describe of his past, then it'd be worth keeping him, but if we stayed on course with his "plans", Ferelden would inevitably be conquered by the Dark Spawn Sub-Saharan immigrants. He's just a ****** past his prime that NEEDS to be put down like a rabid dog.

Well, that depends on what one considers the worse ruler; Urthemiel or Celene. πŸ€ͺ
Of course, Loghain did not know about the former, so in his mind things were - at least until "the darkspawn incursion" proved to be quite a lot more than that - clear.
But he had set a course at Ostagar he couldn't change, even when he learnt the truth about what was happening.
It was either victory against Eamon and his allies, or death. Which he well knew could come at the hands of the darkspawn anyway.
