I remember playing the one for SNES as a kid and being obsessed with it. I don't think it aged that well / was actually that good -- but I still love the idea of the game.
I've been trying to find something similar ever since but nothing quite captures the same feel. I tried Horizons Gate, but it was more a Final Fantasy Tactics with uncharted waters features tacked on almost as an afterthought.
What are your guy's opinions of the old ones, and have you found anything similar since?

I loved UW as well an i still think it holds up for what it's worth.

From reading the description… Caribbean Legend is similar, perhaps?
