I am not sure why you would take the egg laying thing seriously. Why does Kirby eat and cook people to absorb their powers and spit them out? "haha kirby must be a cannibal". It's a colorful 2D sidescroller game made by Nintendo with mushroom midgets who serve a human princess (the only one around), two guys who jump into pipes, some random evil turtle-dragon who wants to marry the human, etc. It's a colorful gamey game, not a constructed immersive RPG story or setting.

I always assumed that the yoshi species reproduced asexually, seeing how they all look alike except for their color, though Yoshi himself has indeed been addressed as a "he" which is the pronoun that also works if Yoshi is gender-neutral or whatever.

Apparently Japanese Super Smash Bros. Melee says Yoshi is 'neither male nor female', whereas Japanese Paper Mario: The Thousand-Year Door contains an NPC Yoshi that mentions wanting to 'see (his) wife', so it's not consistent. I agree that his personality seems masculine.

Brawl, where Solid Snake assumes that Yoshi is a female because of his egg-laying abilities, only to be corrected by Otacon (both of whom use "it" rather than "he" or "she" while they are talking about Yoshi). It is addressed again in Super Smash Bros. for Wii U and Super Smash Bros. Ultimate, where Viridi remarks that there is nothing natural about a male who lays eggs while Palutena asserts that all living beings have both male and female elements.
