The rest of your post I've already dealt with, but this deserves specific consideration, not least because I sympathize with the distaste for this idea.

There are inherently bad methods, actions we can take in pursuit of our goals that by their very nature are inextricably tied into sin, such that taking them is automatically evil. Murder. Rape. Deliberately leading someone into, or abetting their pursuit of, evil behavior. We agree on this principle (though I strongly suspect we arrive at it for very different reasons).

Censorship is not an inherently sinful method of pursuing a goal. It is precisely one of those that is in the realm of, "only bad targets". Censorship in other contexts is obviously and absolutely necessary.

Refusal of a service, even a public service, is not an inherently sinful method of pursuing a goal. In the same way that giving service to all is not inherently sinful, and has in fact been used to great effect in the ministry and conversion of the lost. These are precisely those in the realm of, "only bad targets". It is right and good to refuse service that would be used in support of evil (remember Jack the baker in Colorado?). It is right and good to give service in support of ministry and evangelization (although I would argue that too often these goals are used as license to pursue money at the expense of true ministry - IE, "I'll sell kids to ******* because then they'll think I'm nice and I can talk to them about Christ!").

Therefore, the only problem I have with payment processors refusing service per se is that it applies to me, and not to those that I think it should be applied to.

The idea that payment processors or other entities are a special case whose actions we are never allowed to appreciate because of their ability to have such a massive impact on their targets is correctly understanding a problem and then completely missing the point. The solution is not to get angry when they use the power they were allowed to accumulate in a way that happens to align with our goals and desires. The solution is to not allow them to accumulate the power in the first place.

Making the case that there should be no ability for Visa and Mastercard to dominate their sector of the market so completely has zero bearing on whether I should be happy or upset that coombait is no longer allowed on Steam (I know it's more complicated than that but I trust you get the point). It would only apply as a matter of concern if there was some question of that power being used against me later on, and the time to address it in that case was back then. It wasn't addressed back then, and there is no question, it's being used against me.

If you want to make the case that this is a good chance to revisit crushing monopolies like payment processors, I suppose I can be brought aboard. You'd have to make a pretty convincing argument why I should have a problem with the nukes that got dropped on me being dropped on my enemy though.
