That is, it has no windows an adult could squeeze through and a few doors?

Maybe I'll pop up a drawing of it sometime after but suffice to say for now that the foundations and lower walls are stone and the upper walls and roof are made of wood, same goes for the tower that Kal climbed.

On windows, there are a few small ones but large enough for a small adult to squeeze through but they are up high and some hard surface climbing would be needed. Or a ladder or something. You can always enter the Church through the door, if you escape the cemetary through the enclosure gate.

I don't mean to be anti climactic but can't we just all outrun these slugs? They're slugs.

They move slow overall but in jerky, spasmic movements. Maybe you can outrun them.

Gonna be a bad look for us if we walk by these slugs a mile out from town and then they munch on a woman foraging berries or some kids playing outside of town.

If the encirclement can be broken and the party is able to outpace the slugs, we could use ranged weapons to pick them off.

This is possible to try, I encourage all creative strategies and tactics and let the consequences be the results of the dice rolling.

Not sure where you will be going, but the image of you writing as you observe some beautiful scenery or landscape, whatever that may be, is a beautiful one. I hope, if it is something that could indeed be this way, that it gets you inspired! Creating while outside, or able to even just look outside, even just towards moving scenery, I think it's one of the most wonderful feelings in the world.
