One thing I quite liked about Star Citizen was how you could seemlessly walk into a shop, walk up to a shelf with guns or helmets on it, look at the thing, and then a holographic name tag and pricetag will appear next to the item. If you want more information or want to buy it, you can press F1, and then that will open up a screen with a description, stats, buy option, etc. Another memorable moment was when I went to the spaceship dealership at Hurston, and walked around the spaceships both the small ones inside the building and the frigates and cruisers outside, and their pricetags came up and I couldn't afford them.

Another neat shopping experience was in animal crossing, walking into Tom Nook's store and then rather than getting a UI list of all of the items to buy and then clicking to buy them from there, you instead saw the items on shelves and walked around and pressed A on them, and Tom Nook was following you like you were a thief and would give his personal commentary on the item and offer to sell it to you for X amount of bells.

Is there anything else more interesting than boring shop UI screens/lists?

Some people, and they're wrong, don't actually want to be immersed in the experience but just want to quickly buy and sell junk.
Being able to walk around a shop and inspect the items is obviously a vastly better experience. So those that oppose it should be beheaded.

That's cool and all, but I would slit my own throat if that's how I had to shop in every game

Not an RPG but Beyond Good & Evil has neat shopping experience - there are vending machines that are scattered around the world in which you can rotate the goods to buy them. There is also a shop with the upgrades to your hovercraft where the new parts are displayed on a showcase and there is also a special round slot for the pearl currency that is used there.
