The abstraction makes it, I think.

I'm sure Vavra was not in fact, 'surprised' by the accusations. I think actually he knew it would happen - that's why Musa is in the 2nd map, and that's why he went radio silent. He knows that we know he wasn't surprised. I suspect he just thought that maybe he only thought, that we knew that he knew - and that going silent would make it go away, as there wasn't any solid proof.

But as you say, he knows that we know that he knows we know that he knows he wasn't surprised.

The jew knows that he's called out when he's called a jew - because that means that all his scheming was already know to us, and that his belief that he thought we didn't know was actually wrong, and that we did in fact know, the entire time.
