They're just remasters so they look way better and still keep if not improve on the style.
The people remastering it also know what they're doing and haven't censored anything from the original game (aside from the statue but that was changed after the controversy).

So it's really up to you, I think they're worth getting

Yes, they allow you to turn off every new graphical and QoL feature. The only exception so far that is kind of a problem is Defiance has a new inventory UI that you cannot revert back to the original. Which is a bigger problem because it's missing the voice overs for the unlockable moves now.

The new graphics are pretty hit or miss. SR1 is a direct improvement in most areas besides some flat lighting, SR2 is worse in almost every way as everything besides the main characters are just slight AI upscale of textures with the models being mostly reused from the SR1 remaster which look REALLY off model with the facial animations in SR2.
Defiance I'm still going through and haven't come to a consensus in. The model for Kain is MUCH better than SR1&2 remastered. Raziel I'm iffy on and Moebius looks horrible so far.

I'm still not overly fond of the slavish devotion to making Kain look like the SR1 intro cinematic but the Defiance Remaster model is so much better than the Soul Reaver Remaster one its no contest.
